Today I had an awesome lunch. I planned to sit at my desk and read some blogs but the office was so quiet I felt self-concious of my crunchy toast – so I went out and sat on the 16th floor balcony of my work downtown. As I watched all the little people scurrying to and fro, I practiced being mindful. My detox coach suggested that I become more aware of my eating habits and the relationship between food, body and mind. So – thus begins my practice. With every bite I took, I casually counted the chews and noticed all the muscles hard at work, chewing my yummy “tuna” sammy. Sounds silly – but when was the last time you actually paid attention to some of the things your body does so naturally? It’s pretty marvelous.

My current opinion of this detox? SUCKS. It’s memorial day weekend and I’m going to make the best of it though. Last night I had a horrible headache, my body ached and I was so tired and weak. I chatted with my detox coach and she had me take an epsom salt bath, drink more water and detox tea, and be mindful of where the pain was coming from – dehydration? stress? My bath was nice and helped relieve the overall body aches. The headache was weird though – it’d come and go in waves, one minute I’d be fine, the next minute I’d be so weak and achey, the next minute my head would be pounding and I’d have to lie down from the pain. Finally at 5am this morning I gave in and took some ibprofen, which helped immensely.
Today is the first day that I’m off soy, corn and peanuts. I’m now on 2 scoops of the chalky detox powder in the morning and 2 scoops at night. I’ve been drinking a ton of water this morning hoping that will help flush my body toxins easier.
Today’s breakfast was amazing! 7-grain hot cereal with chopped raw almonds, dried dates, half a granny smith apple and a splash of unsweetened coconut milk.
I’ll be keeping it easy today. Hopefully the sun will come out and I can take a nap in the backyard. I’ll also be researching some gluten and soy free bbq recipe ideas for this weekend.
This detox thing sure sucks and my body feels weak and achey, but I’m not gonna let that get me down. I can do this!!
I’m not one to brag (actually I am), but this salad is rocking my world right now.
- black beans (soaked overnight, no seasons, slow simmered to perfection)
- red quinoa (seasoned with smoked sea salt)
- marinated tempeh (soy sauce, apple cider vinegar, onion & garlic powders, frank’s hot sauce – bake 400° for 10 minutes each side)
- fresh avocado
- fresh organic red bell pepper
- raw sunflower seeds
- fresh broccoli
- fresh green onion
- tbsp of wasabi dijon salad dressing
- spring greens mix
Can you say powerhouse of awesome? I wish I had some of my ground flax seed to through in as well, but alas, I save that for my salads at home. My obsession with awesome salads may be getting out of hand – considering my blog’s name is Awkward CUPCAKE. hrm…
I don’t particularly dream about eating salads every day at work, but it has proved to be the healthiest, cheapest, easiest and all-around most awesome lunch for my busy day at the office.

vegetables are VERY important! Today’s snack:

Fresh mixed veggies with homemade White Bean hummus Dip and a slice of all natural local made Whole grain bread (say no to preservatives!) YUUUUM!

Super low fat burrito: Black Beans, Roasted Butternut Squash & Onions, Brown Rice, Whole-wheat flour low-fat tortilla, Fat Free Tillamook sour cream, & Fresh salsa.
The picture was taken in the middle of my munchfest but i wanted to show just how ugly this hidden beauty is, the butternut squash is definately the missing ingredient i was looking for.
I’m all about bringing home-made Burritos to work for lunches b/c I ride the bus to work and look for the easiest and fastest healthiest ways to eat at work. In the morning i grab a small container that already has the beans-rice-squash mix, a folded up flour tortilla in a little baggy, and then i spoon in a little dallop of sour cream into a tiny jar with some fresh salsa. everything is premade from a couple nights previous and ready for me to throw in my bag and run out the door. When i”m in the break room, i warm up the rice mix and put the tortilla ontop of the steaming hot rice. this way, by the time i get to my cube, the tortilla is warm and flexible and ready to be wrapped into a burrito! its super easy and beats the hell outta a boring sandwich or last nights leftovers.

I made a Lentil & Barley “meat”loaf on Monday. there were tons of Lentils and Barley leftover from the recipe so i thought up this amazing burrito for my lunchs at work:
1/3 cup of Lentils
1/3 cup of Barley
couple sprigs of Cilantro
fresh salsa made to your palette
1 whole wheat tortilla or flat bread
zap in the microwave and BOOM! this is so amazing, super cheap and super easy to bring and make at work.
