vegetables are VERY important! Today’s snack:

Fresh mixed veggies with homemade White Bean hummus Dip and a slice of all natural local made Whole grain bread (say no to preservatives!) YUUUUM!

Over the past couple months of food logging, tracking calories and trying to be mindful of what i eat, i can honestly say I’ve grown a more deeper appreciation for food.

Have you ever really taken the time to really drink the sweetness from that bite of apple? One thing i learned from reading ‘Dharma Punks’ food meditation.  If you don’t have time to meditate daily or you dont know how to, i strongly suggest trying Food Meditation. All that means is to be mindful of the crunch, the sweetness, the textures of each bite. When you take a bite, chew it entirely and swallow. Do not add more to your mouth until you have finished bit of food. Finish each bite and breathe, then take another bite.  It’s very calming and it’s what I’ve tried to do with every afternoon snack at work.

I'm an awkward gal with a family of 2 bratty cats, a wee little Boston Terrier and a hungry husband. We live in Portland Oregon and lead a pretty chill life blessed with good local food and micro-brews.

We only cook low-fat and nutritional vegan meals, with a handful of vegetarian dishes. I hope there's at least one recipe that I make that inspires you to create awesome meals in your own home.
