Seems like it’s been forever since I’ve baked anything, let alone cupcakes. Which is absurd!
I used the well trusted Vegan Cupcakes take over the World recipe for the chocolate cupcake, used apple sauce instead of oil and made these *almost* healthy, there’s a lot of sugar… and the icing isn’t exactly good for you. But who cares, I need my chocolate fix.
We’re going to a “farewell summer” BBQ tonight and I was asked to bring a dessert. Awesome. So I made plain cupcakes from Isa’s “Vegan Cupcakes take over the world” recipe book. This recipe never fails me!
The ganache is made from soy milk warmed almost to a gentle boil, throw in some maple syrup and a couple handfuls of semi-sweet chocolate chips and BAMO. crazy amazing ganache. Stir till smooth and let sit at room temp. Then, dip that shit.
These turned out so cute!
And look rad on our new cutting board. (yes, it really is that blue.)
Oh, and yesterday we had some friends over for a Pumpkin carving party. I made some Pumpkin Walnut Raisin muffins and home-made apple cider, the muffins disapeared before I could snap a photo!

It was a lot of fun just chillin in the kicthen with some knives, guts and good company. Here’s Woodz and my pumpkins!
