One of Woodz many talents is making amazing vegan sushi. Seriously, I think it’s the only reason why I keep him around. ;)

Avocado, mushrooms, asparagus, sprouts, carrots. cucumber and brown rice.

oh my goodness….

Let me just start this by saying that we take sushi night very seriously. Woodz is now the pro at wrapping the rolls, but I hold the reward for tempeh magic.

I got the idea from Isa’s sushi section in her VwaV book. It’s basically super easy- Crumple & cook up the tempeh on the stove till about brown. Throw in a bowl, let cool. Add some Vegenaise, some Sriracha sauce stir up till it looks like this:

mmm. tempeh, i love you so.

then add it to the sushi rolls and BLAMO! AMAZING! It’s basically a vegan Spicy Tuna roll.

wilted spinach

Wilted spinach is basically heating up a pan, add a splash of water, some spinach and mild seasonings. Once pan is hot, turn it off! move spinach around and watch it wilt. *don’t have it on the heat too long or it will over cook the spinach.

We add pretty much whatever veggies we have on hand. Tonight we used: Alfalfa sprouts, carrots, English cucumber, avocado, tempeh, all on brown rice.

This is seriously better than any sushi restaurant in town. And I don’t know of any sushi place that subs tempeh for fish. It’s also a great snack to have on hand at a potluck or house party.

Woody’s favorite thing to make these days is vegan sushi. Seaweed, marinated & baked tofu, avocado, rice, carrots, sprouts, cucumber, broccoli- pretty much anything we have in the fridge. He should really call it “Everything but the kitchen sink” sushi. He’s gotten really great at rolling them, better than me! Awesome job grasshoppa!
