ok whoa. These taters are the best roasted potatoes I’ve ever had. Hands down, best evar.
Ingredients
- 3 yellow potatoes
- tbsp extra virgin olive oil
- 1/2 chopped fresh Italian parsley
- salt & pepper
- dash of cumin
- dash of chili powder
Directions:
Preheat oven to 475º. Cut potatoes into inch thick pieces. Throw them in a bowl, add all the oil & spices making sure to leave out the Italian Parsley, and shake it all about! Layer the potatoes on a cookie sheet and bake for 30 minutes, turning a couple times to ensure all sides get golden browned. After thirty minutes, take potatoes out and throw back in to the big bowl you used. Add parsley and shake it until each tater is kissed with parsley. Voila! Serves 2-3.
I made these as an accompanying dish to a fresh veggie medley stir-fry.
Woody’s favorite thing to make these days is vegan sushi. Seaweed, marinated & baked tofu, avocado, rice, carrots, sprouts, cucumber, broccoli- pretty much anything we have in the fridge. He should really call it “Everything but the kitchen sink” sushi. He’s gotten really great at rolling them, better than me! Awesome job grasshoppa!

Fresh mixed veggies with homemade White Bean hummus Dip and a slice of all natural local made Whole grain bread (say no to preservatives!) YUUUUM!
Over the past couple months of food logging, tracking calories and trying to be mindful of what i eat, i can honestly say I’ve grown a more deeper appreciation for food.
Have you ever really taken the time to really drink the sweetness from that bite of apple? One thing i learned from reading ‘Dharma Punks’ food meditation. If you don’t have time to meditate daily or you dont know how to, i strongly suggest trying Food Meditation. All that means is to be mindful of the crunch, the sweetness, the textures of each bite. When you take a bite, chew it entirely and swallow. Do not add more to your mouth until you have finished bit of food. Finish each bite and breathe, then take another bite. It’s very calming and it’s what I’ve tried to do with every afternoon snack at work.

I was surfing the web for info on chickens and gardening when i tripped over this blog post. The book sounds exactly what i’m looking for. I can start reading up on this stuff now, so when we get our home we’ll be educated and ready for serious city farming.

Its supposed to be spring right about now, but March is still saying OK to snow. bah! On March 21st Woody’s sister is throwing a block party full of seed swapping and fun things like that. I can not wait! I’ve been thinking of herbs and fruits and veggies i can plant in pots on my side porch. I still need to observe the light it gets.
Since Woods and i are renting and our housemates have the main garden in the back, i’d like to have a separate potted garden i can pick up with me and take to our next abode (when and if).

- chives
- basil, basil and MORE basil!
- mint
- Strawberries
- ginger
- garlic
- lavender
- oregano
- small peppers like jalepeno and serrano peppers
I need to research what else grows well in pots. also gotta talk to the neighbors and see if i can at least just plant Zucchini. YUMMM.
